FROM FOIE GRAS TO FRIED CHICKEN
In 2007, Zack Sklar and Justin Kurtz, chefs/owners of Cutting Edge Cuisine, started the company during their years at the prestigious, Culinary Institute of America in Hyde Park, New York. After graduating, they moved the company back to Michigan pushing the boundaries of the once stale catering scene in the area. As a result, the company has been one of the leading catering companies in the Midwest for 14 years and counting. Once established in the Detroit food scene, Zack opened his first restaurant Social Kitchen and Bar in Birmingham, followed by MEX, Beau’s Grillery, and Como’s, thus creating the Peas and Carrots Hospitality group. The fast growing restaurant group decided to join the extensive food scene in Chicago by opening Bernie’s Lunch and Supper. Peas and Carrots has become one of the largest hospitality companies in the Midwest.
Our enthusiasm and passion for great food, served in the most creative manner ensures that each and every guest will be totally wowed. We take great pride in offering custom menus for every event. Rather than working from set menus, we meet with our clients to determine what they like, what they think their guests will like, and together we create a one of a kind menu that embodies everything they want.
We continuously sample, research, test and create new and tantalizing recipes. We will work with you on old family recipes or finding a new spin on a traditional dish. We explore new food markets and seek out local purveyors and growers. We’re constantly seeking out new techniques and trends… all with the desire to share with our clients a fresh, robust excitement in the art of dining and entertainment.
What sets us apart is our approach to maintaining great food quality as we prepare/finish food onsite to ensure the best catering experience. Hours before the start of the event , our entire team arrives onsite with fully equipped catering trucks containing all of the appropriate equipment ranging from industrial convection ovens and fryers to tables, plate settings and specialty linens. Our goal is to make sure the client and their guests have the most memorable experience with unique food/station/decor presentations, great service, and exceptional food so that our clients can relax and be a guest at their own event.
